Peel and de-seed a butternut squash.
Thinly slice it with a mandoline.
Microwave the sliced squash for about 8 minutes, stopping to rearrange/stir about halfway through.
Make a lasagna as you usually do, but instead of noodles, use the butternut squash. (The only other change I made was to mix a baking spice blend of cinnamon, cloves, nutmeg & ginger in with the ricotta cheese & the meat - about 2 t. of the blend in each.) Bake it like you normally bake lasagna.

(I made my standard meat lasagna, but I'm sure it would be equally delicious as an all-veg lasagna. I'll probably try it with my mom's spinach & mushroom lasagna recipe one of these days.)

I could not believe how tasty this was. Very slightly sweet, savory, cheesy, DEE-LICIOUS.

Oh, I definitely plan to. We've got a MOUNTAIN of squash from the CSA, and I've been struggling to come up with uses for all of it. Your gnocchi recipe is currently at the top of the pile for what to try next. :)

Thank you! We remembered hearing this, but forgot the source (and later remembered). We are excited to try it (and are similarly burdened with a superfluity of squash from the CSA).

My family vetoed this plan. [Although my idea was pumpkin rather than butternut, which might be important to them.]

Pumpkin sounds good to me! I wonder, though, if it would get a little too mushy with cooking - it seems to me like butternut squash cooks up firmer than pumpkin, although I could easily be mistaken.

And it's GLUTEN-FREE! That's awesome! I don't have a regular lasagna recipe, of course, since the whole gluten thing, so would you mind sending me an email with the full recipe? With meat please. That would be awesome! I'd get to have lasagna again! Whee!
